Well, I had to tell my son they were simply yummy fish nuggets, since he’s completely influenced by scary words like PARMESAN, but he loved his yummy fish nuggets.

Thanks to quick, easy, and delicious Kraft Fresh Take—so did the rest of my family!

I’m so excited to be participating in this project as a Kraft Fresh Take Flavor Maker. Kraft presented me with a challenge card to help inspire a recipe for my first post. Here’s what I had to work with.

My Kraft Fresh Take Challenge: Think outside of the box—use Fresh Take with your favorite seafood. Choose a family favorite carb to accompany your dish.

When I saw the word seafood, I knew that I wanted to use my assigned Kraft Fresh Take flavor, Rosemary and Roasted Garlic, to create some toddler-friendly fish bites for my son’s lunch.

Sometimes it’s easy to turn to peanut butter and jelly at lunch time, but I am really making the effort to mix it up by introducing healthier foods and new flavors to my kids.

Baked Parmesan Fish Bites

I used fresh cod for my fish bites, but you could use any fresh fish you like. After cutting the fish into small chunks, I simply dunked them in an egg mixture (see recipe below), rolled them in the cheese and breadcrumbs that make up the Kraft Fresh Take, and popped them in the oven to bake.

Simple. Just the way I like it.

I found Kraft Fresh Take super easy to use, you just pop it open and the breadcrumbs and cheese will combine. Give it a little shake to help the process along. The cheese in the Rosemary and Roasted Garlic Fresh Take is actually a blend of parmesan, mozzarella and romano, but the parmesan flavor shines through in the dish (hense the name.)

What’s more, the thing I love most about Kraft Fresh Take (besides the ease), is the incredible flavor. This is isn’t just breadcrumbs and it isn’t just cheese, it’s something special. The flavor is… well, it’s substantial. My fish was truly elevated by the amazing flavor of the Rosemary and Roasted Garlic Kraft Fresh Take.

To complete my challenge, I included some yummy sweet potato fries with Evan’s lunch.

Baked Parmesan Fish Bites with Kraft Fresh Take

Yield: 4 servings

Prep Time: 20

Cook Time: 10

Total Time: 30

Ingredients:

2 Whole eggs
¼ Cups whole milk
4 Tablespoons Greek yogurt
1 Package Kraft Fresh Take Rosemary & Roasted Garlic
½ Lemon
1 Pound fresh cod

Directions:

1. Preheat oven to 400º and line a baking sheet with parchment.

2. In a bowl whisk the eggs, milk and Greek yogurt until smooth.

3. Open the Kraft Fresh take and combine the breadcrumbs and parmesan cheese in a shallow dish.

4. Squeeze fresh lemon juice over the cod and season lightly it with salt and pepper.

5. Slice the fresh cod into small nuggets.

6. Dunk the cod into your egg mixture, then roll in the Kraft Fresh Take mixture, making sure plenty of the crumbs adhere to the fish.

7. Place breaded fish bites on your baking sheet. You may need to work in batches.

8. Bake for 10 minutes, then turn on the broiler and watch your fish bites as the tops become golden brown.
