Chicken stir-fry over quinoa

A month ago, I had never even tried quinoa, and now here I am posting my second quinoa recipe to the blog! This time, it’s chicken stir-fry featuring some of my favorite fresh seasonal vegetables—over quinoa!

Chicken Stir-Fry Over Quinoa

I actually found a great stir-fry recipe on the Kraft website by accident while searching for zucchini recipes earlier this week. It’s funny how you sometimes stumble onto recipes you didn’t know you wanted to try!

I adore stir-fry and love rice, but wanted to give stir-fry over quinoa a try. It really tasted fantastic, and the KRAFT Lite Asian Toasted Sesame Dressing added the perfect flavor to this dish. It wasn’t totally overpowering, so the stir-fry was a hit with my entire family.

I typically use a combination of soy sauce and honey in my stir-fry recipes, but honestly, I’m pretty sold on KRAFT Lite Asian Toasted Sesame Dressing for stir-fry, and it saves me some time, too.

Chicken Stir-Fry Over Quinoa

Of course, for an even quicker version of this recipe, you could substitute the fresh seasonal vegetables for a bag of frozen stir-fry veggies!

I really love a good summer stir-fry, with tasty chicken, tender-crisp veggies, and a great sweet and tangy sauce. Combine that with some delicious quinoa and how can you go wrong?

Chicken stir-fry over quinoa

Ingredients:

2 tsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
3 cups fresh blanched vegetables (I used snow peas, broccoli and a red pepper)
2 cloves garlic, minced
2 tbsp. soy sauce
1/2 cup KRAFT Lite Asian Toasted Sesame Dressing
1 8 oz. can water chestnuts
3 cups cooked quinoa

Directions:

SUBSTITUTION: 3 cups frozen stir-fry veggies.

Heat oil in large nonstick skillet on medium-high heat. Add chicken and garlic; stir-fry until chicken browned.

Add blanched fresh vegetables (I used snow peas, broccoli, and red pepper strips); stir-fry 5 to 7 min. or until peppers and broccoli are crisp-tender and chicken is done. Add water chestnuts, dressing and soy sauce; stir-fry 3-5 min. or until heated through.

Serve over prepared, warm quinoa (tips on cooking quinoa).

    I have been wanting to try quinoa but the recipes always seem so complicated. This one looks easy enough for me and delicious too!
