With Mother’s Day just around the corner, I decided I needed to find a sweet and simple recipe to make with my 3-year-old as a surprise for my mom! Evan loved the idea of preparing a special treat for his beloved Mamaw, and this chocolate strawberry shortcake recipe is both incredibly easy, and scrumptious!

When I say that this chocolate strawberry shortcake recipe is easy, I mean crazy-easy.

You probably have the ingredients for the cake itself in your pantry right now, and it bakes in a mug in your microwave in just 2-3 minutes!

Plus? This recipe chock-full of strawberries. Red, juicy, delicious, fresh strawberries. What could be better than that?

Chocolate Strawberry Shortcake Recipe

I was a bit skeptical about a chocolate cake cooked in the microwave, but let me tell you, it was a snap to prepare, yet it tasted rich, warm, and oh-so-ooey-gooey. It was the perfect simple cake to go with fresh strawberries and a dollop of Cool Whip!

Evan loved helping me assemble the layers of the chocolate strawberry shortcake — he especially loved adding a few fresh strawberries to the top!

Yield: 1 serving

Chocolate strawberry shortcake

Ingredients:

Chocolate Cake
3 tbsp flour
4 tbsp granulated sugar
3 tbsp cocoa powder
1 egg
3 tbsp milk
3 tbsp oil
3 tbsp dark chocolate chips
PAM Original No-Stick Cooking Spray

Topping
1/2 cup cut-up fresh strawberries
2 teaspoons granulated sugar
Cool Whip topping

Directions:

Combine strawberries and sugar in small bowl; set aside.

Spray insides of 2 microwave-safe mugs with cooking spray.

Combine dry ingredients in a medium bowl, then mix wet ingredients one at a time. Mix in chocolate chips.

Spray inside of mug with cooking spray and pour batter into mug.

Microwave mug on HIGH for 1 minute 30 seconds to 2 minutes in 1250 watt microwave. Increase to 3 minutes for lower wattage microwave.

Cut the cake into 1-2 inch layers and assemble your strawberry shortcake using a cake, whipped cream, strawberries pattern. Place extra fresh strawberries at the base of your cake.

Prep Time: 10 minutes

Cook Time: 2-3 mintues

Total Time: 15 minutes

    My best Mother’s Day memory is that on May 13, 2001 on Mother’s Day is when my hubbie and I started seeing each other. We started talking after a dinner on the grounds at church and have been together ever since. I’m a mother now to two wonderful girls but the day I began my life with their daddy is still my favorite Mother’s Day.

    My favorite mother’s day memory was last year. My husband sent me on some ridiculous trip to the grocery store. I came home and my kiddos had made me a huge chocolate chip cookie in the shape of a heart and covered in strawberries. Then we all snuggled up and watched Beauty and The Beast.

    My favorite Mother’s Day moment is getting taken out to brunch nearly every year to a Mexican restaurant. I’m not sure how this became a tradition, it just did! We’ll break that tradition this year, but only because my oldest son is making his first communion Mother’s Day weekend and the whole family will be in from out of town.

    My best mothers day memory was 9 years ago – our only child was born! What an amazing gift! Every year since then we have spent Mothers Day at Thomas the Train since that is the weekend he is in town. Thomas the Train is what made my son the happiest, which makes my heart sing.

    Also, when my son was just a few hours old, he lifted his head as I held him, and I swear he kissed me! How much better can life get?

    I must say that my favorite Mother’s Day moment was last year. It was the last with my Gram as she passed away in August but we had all of the women of the family together to celebrate her that day since we knew she wouldn’t have much time left.

    Every Mother’s Day is very special to me, so I couldn’t name just one. My mom is gone now, so all of the ones I had with her are held so close to my heart, but also the ones I share with my children and my husband now.

    My favorite Mother’s Day moment is simple………simply being a Mom! I had been told that I would never be able to have children due to a medical complication but I was so persistent that my husband and I have three children ages 5, 6 and just turned 8. Mother’s Day for me is a day to reflect on my blessings and enjoy time with my family!

    My favorite part of Mother’s Day is simply being a mom!! We dont use make too much of a fuss over Mother’s Day, but one year I was awakened not by the alarm but to giggles and 4 little boys with their homemade cards, and lots of sweet kisses. They had spent the night before while I was at work fixing them up for me. I still have the cards. I have every card but those mean so much more than just a signature on a store bought card.

    The first one that comes to mind is the high tea my mom, my sister, and I had together. It was the last Mother’s Day before Mom’s ALS diagnosis. We had a lovely time.
    She went home to glory less than two years later, so I only had one more Mother’s Day with her.

    My favorite Mother’s day memory was probably last year. My kids and my husband just made me a princess for the day. I didn’t lift a finger… no cleaning, cooking and got a manicure and pedicure from my kids. It was awesome. :)

    I am lucky enough to have my favorite mother’s day moment happen every year. My husband and kids always make me breakfast in bed. My favorite moment is when they come up the stairs to wake me, their eyes bright and proud of what they have helped make. I get a wonderful hug, kiss, and loving Mother’s Day greeting from each of the four kids, and my husband too. I couldn’t ask for a better way to start the day than that.

    My mom was an amazing lady. She had poise, generosity, and class. She always behaved as a lady but also knew how to have some fun. I remember quite a few years back when she came to Disneyland with us, I was amazed that even though she was in her 60s she rode every ride that us young pups did. Another thing about her is that she loved to make food treats that would wow people. She loved doing chocolate covered strawberries and even made little mice out if cherries and Hershey’s kisses. I miss her dearly.

    My favorite moment was staring into my infant’s eyes for my first Mother’s Day. It was then I realized the importance of the role “mom”. This year I will celebrate my 5th Mother’s Day and every day I grow to respect my mother more and more. This is not an easy job, but it is the most rewarding (and challenging). ;)

    The last Mother’s Day I got to spend with my mom before she passed away I slept over her house the night before and woke up early to make her a beautiful breakfast. We took my daughter to a pnd near by and fed the ducks like she used to do with me as a child. The reason why I share this moment is because each year since shes been gone on Mother’s Day I can imagine this moment we shared for and will cherish it for the rest of my life.

    My sweet mom is passed on from bone cancer, taken at a young age. But my most loved and cherished Mother’s Day memory of her, is when myself, my daughter and my mom took a trip right before she died, to the beach like she hoped for. She was very weak and limited to what she could physically do, but we enjoyed every blessed second of that trip. We live in TN with all mountains and enjoying the ocean was my mom’s most favorite place to see and feel close to God and all he created. Her exact words spoken time and time again, as I grew up. I miss her so much. Happy Mother’s Day & I hope you still have your mom to hug and make memories with. Life is to short to miss those opportunities. :)

    One Mother’s Day when my sons were around 13 and 9, they made me breakfast in bed. They EACH made me a breakfast, so I had to eat TWO breakfasts. At least they were two DIFFERENT meals. They are sweet boys.

    before my mom passed away she was bed ridden, I sat in the bed and i made a light breakfast for her Just the two of sitting in bed eating breakfast, it was filled laughter tears but the best moms day for me.

    My favorite Mother’s Day moment was when my daughter presented me with a jar with a hundred small pieces of paper inside. On the jar was written 100 reasons why I love my mom. Each piece of paper had something written on it. It was the best Mother’s Day gift ever.

    My favorite mother’s day event was one that included my mother, my 2 sisters, my neice, my daughter, 3 of my friends, their mothers, and their daughters or nieces. We did manicures and pedicures for each other, followed by a tea party that featured lemon pound cake topped with strawberries and whipped cream. It was long, beautiful, relaxing and memorable!

    When I was sixteen, just a week after my parents divorce. I spent a few months of allowance to treat my Mom. I took care of everything around the house the cleaning, laundry and meals. Pampered her all weekend and was just there for her, when she needed me after that she has done for me.

    My favorite Mother’s Day moment was when my daughter surprised me with breakfast in bed, she was so excited to make it. She made me oatmeal, toast, juice, and something else. But what I remember the most was the oatmeal, it was like glue…she was just learning how to make things. I definitely still ate it , didn’t want to disappoint her but it something I’ll never forget since she was so proud of herself.

    My Mother’s Day have been so rewarding for the last 3 years and this will be my 4th Mother’s Day were I get to enjoy and celebrate this special day after just reuniting with my children just 4 years ago after a very long absence ……I love my Mother’s Day

    My favorite Mother’s Day memory? We have a rose garden in the backyard, and every year my dad will never fail to present a bouquet of fresh roses to my mom on Mother’s Day. :) I love finding the vase of flowers in the morning, because it’s such a small gesture, but it means he’s thinking of her!

    Last year I hosted Mothers day for my family and my husbands family including all of the siblings on both sides. I had a very pretty buffet. I made favor bags for all of the women with cute things from Pier one. Two of the women who are not married were so grateful for getting a little something it really made me feel good.

    My favorite Mother’s Day moment so far took place two days ago (not on Mother’s Day, I know!). My 4 1/2 year old seems to just be getting the hang of what Mother’s Day is all about, which is why this year is already my favorite! A few days ago he was saying that he has an idea of what to get me, but he doesn’t know where to buy it. I could tell it was really hard for him to keep from spilling the beans. He’s never been very good at keeping something secret, so it was so fun for me to watch him try so hard to keep his secret! SO CUTE! He said he’d talk to Daddy about it! I just love that he’s been thinking about me in advance and planning something!

    This was my favorite Mothers Day by far! Our 9 year old son made me wind chimes, our 3 year old made me her first hand made project, a painted birdhouse made out of a dried gourd (with help from my father in law), and this year we had a new addition, our 10 week old little girl!! My husband works out of state, so it’s very special when we all get to spend time together as a family.. I loved it!

    I had the best time out with my family just this last Saturday. We celebrate Mother’s Day all weekend long. We went out to a late lunch and sat out on the balcony with the kids. My husband and I sipped sangria and ate pizza. It was a delightful day.

    I would have to say this years Mother’s Day reminded me of how important my role is. I have two boys, Ryan is 3 and Zachary is 6 months. And my Mother’s Day was spent doing what mothers do, I was taking care of two sick kids. My oldest has an ear infection and my youngest has a cold. Mother’s Day is to remind all of us moms how much we are appreciated, and I got that appreciation when my son would look at me and say “Mommy, can you just cuddle with me?” It is moments like these that remind me that everyday is Mother’s Day.

    My favorite Mother’s Day moment, was my last one with my Momma. She needed 24 hour care, I was living with her until I fell and broke my ankle in 2 places. Anyway she was at my older sisters house, and we had a Mother’s Day Dinner for her. All four of her daughters, four grand daughers, & 3 grand daughters-in-law.
    My Momma was so happy that day she was laughing and opening her gifts. She had been very sick for so long and we knew this might be her last Mother’s Day with us, so we made it as special as we could. We all had our picture taken with her, wonderful memories! <3

    My fav was this year. I was sleeping and I heard what I thought was cattle like noises coming from my door! My 2 and 10 yr bumrushed my room and yelled “HAPPY MOTHERS DAY!!” Lol cutest part was how involved my 2yo was!! He held up his colored heart for me!

    Strawberry shortcake is my favorite. My mother used to take me tto the local bakery and we would pick one out. I remember the price was $2.25 and the nice woman behind the counter wold always give me a cookie.

    My favorite Mother’s Day moment was actually this year. I went to bed that evening after having a pretty decent Mother’s Day anyway and found on my bed a note from my daughter that her Sunday School teacher had them write at church that day. The words were all her own though and so thoughtful that I teared up and went and had to give her a big hug and tell her how wonderful it was.

    My favorite mother’s day moment was this year I suppose even though all of my kid were out of town. They all called and I was able to speak to each of them. My daughterinlaw had us over for a cookout. I was presented with a stepping stone my daughterinlaw had made with my grandson’s (16 mos) footprint in it and colorful stones all around. Very nice day.

    This year marked my sixth Mother’s Day – that was for ME as a Mama. It took so long to hear that word (I was 44 when our sweet girl was placed in my arms). The best part of Mother’s Day this year was snuggling in bed with our girl, telling her, again, her story. It’s a story that never gets old for any of us and we tell it often. But on Mother’s Day, it has special meaning. I had come to think I’d celebrate it for me.

    My kids came over and brought the Grandkids also and the guys smoked me a beef brisket and ribs and my daughter made the sides. So nice to be pampered and waited on and I felt so special…like a Queen I tell you! Then they presented me with a ipad that I went crazy over! Perfect day!

    Two years ago my son made me a tile with his hand print and poem on the back. The poem made me sob for over five minutes and I still tear up, sometimes cry uncontrollably when I read it.

    My mom’s birthday and Mother’s Day are side-by-side, so we try to make it a big celebration to cover both days. :) This year, it was a little quieter than usual – but the best moment was watching her enjoy the big steak she requested! :D My mom turned 65 this year. I am SO blessed to have her as my best friend AND my mom!!!!

    My favorite Mother’s day memory is the first with my baby girl (now 23). I did not think I would ever have a baby of my own ( I have 3 step daughters). Hollie was a true gift from God. My husband took Hollie and me out to dinner , Hollie gave me a crystal baby unicorn holding a red crystal heart and her picture. I was on cloud 9… My baby girl, my older daughters and my husband.. Truly blessed.

    my most memorable Mother’s day would be this year. I wanted to go to Hooter’s to eat. The plus side would be 3 out of the 5 of us would eat for FREE so it would dork out. But we were sitting there and one of the Waitresses was making drinks and my 8 year old sin was watching here and she looked over at him and told him you have really pretty eyes. I have never seen my son blush before and he was. It was pretty funny. Then when she was done filling her drinks she came around to our table and just stood and smiled at my son and he got so embarrassed he hid under the table. I have never seen my son do things like this before and it was a pretty enjoyable moment to witness for the first time.

    My parents, son and I head to a local Artists studio tour every year and we make a day of it. It is fun to watch artists blow glass and sculpt.

    I was so happy to be able to take my mom, who has Alzheimer’s out to breakfast with my sister. I hadn’t had her out like this in a long time, and with help from the family, it worked out perfect. I will always have this memory.

    I loved this past Mothers Day. My kids and I spent the weekend with my Mom. The best moment was playing Pictionary with them. We just laughed and had a great time together. It was the best present ever on a Mothers Day.

    My favorite mother’s day moment would have to be my first Mother’s Day as a new mom. My Daughter was 6 months old and I truly began to appreciate the day and what it means to be a mom. I have a whole new respect for my own mom after becoming one!

    My last mother’s day with my mom was hard, but I will always remember. She was in the hospital and we wanted to make things as nice as possible for her, so I made her her favorite rice pudding and brought her flowers. Simple, but it is what she loved.

    My favorite Mother’s Day moment was a surprise visit by my son for Mother’s Day when he was away at college. I had no idea what he was planning. My hubs took be out to a restaurant for dinner to ease my sadness on not seeing my son. What a thrill when the server handing me my menu was my son Chris. It is a Mother’s Day I will never forget.

    This is a crazy one, not a fun one either lol but life as a Mom is a roller coaster! This year while eating at a restaurant my son got sick, pooped himself threw up the whole YUCK during Mothers Day dinner, I will NOT forget that! But my favorite was earlier that morning before he got sick it was a simple I love you and happy mothers day with a hug, hes only 3 and I look forward to so many more Mother’s Days.

    I remember making Mom a special present in Girl Scouts. I must have been about 7 or 8. Mom picked me up and while running to the car, I tripped and it broke. I was so upset. Mom consoled me and used that as a teaching moment and instilled in me that it’s “The thought that counts.” Guess it must have worked because I remember it, 50 years later!

    My favorite mothers day memory is from 6 years ago, all of my grandmothers were able to travel and still with us, we had delicious mini sized desserts from Dorothy Lane Market, fresh cut flowers and great conversations.

    Listening to stories from my mom and grandma’s it was so fun. I wrote a lot of the family stories down so that they wouldn’t be forgotten.. I will always remember that holiday.

    My mother in law passed away the Friday before Mothers Day. On that Mothers Day Sunday my children who were teenagers at the time came to me that morning and told me that they didn’t know what they would do without me in their lives. Coming from teenagers I can tell you that was a very special day for me!

    When my grandsons saw me getting out of car and rushed over to give me a hug and a kiss! Only get to see them about once a month so this was a extra-my daughter and I agreed to meet halfway. My grandson later told me that I could move in with them.He said he would move out of his room. I laughed and said what do I do with my house-he said -leave grandpa there so we can visit!

    This is the way to do strawberry shortcake-we have a group in school that does fundraisers with a company called Marketday-I buy sliced choc cake/with choc chips and keep in freezer for just this occasion!

    My best Mother’s Day was last year when I got to do what I wanted to do all day. Hubby made breakfast, we went to church, out for lunch and home to relax . I spent time with my mom the day before.

    My mom is in Nebraska and I’m in Florida. One Mother’s Day I was actually able to fly home and surprise her! Still not sure how I pulled it off without her finding out in advance but it was great!
