With Mother’s Day just around the corner, I decided I needed to find a sweet and simple recipe to make with my 3-year-old as a surprise for my mom! Evan loved the idea of preparing a special treat for his beloved Mamaw, and this chocolate strawberry shortcake recipe is both incredibly easy, and scrumptious!

When I say that this chocolate strawberry shortcake recipe is easy, I mean crazy-easy.

You probably have the ingredients for the cake itself in your pantry right now, and it bakes in a mug in your microwave in just 2-3 minutes!

Plus? This recipe chock-full of strawberries. Red, juicy, delicious, fresh strawberries. What could be better than that?

Chocolate Strawberry Shortcake Recipe

I was a bit skeptical about a chocolate cake cooked in the microwave, but let me tell you, it was a snap to prepare, yet it tasted rich, warm, and oh-so-ooey-gooey. It was the perfect simple cake to go with fresh strawberries and a dollop of Cool Whip!

Evan loved helping me assemble the layers of the chocolate strawberry shortcake — he especially loved adding a few fresh strawberries to the top!

Chocolate strawberry shortcake

Yield: 1 serving

Prep Time: 10 minutes

Cook Time: 2-3 mintues

Total Time: 15 minutes


Chocolate Cake
3 tbsp flour
4 tbsp granulated sugar
3 tbsp cocoa powder
1 egg
3 tbsp milk
3 tbsp oil
3 tbsp dark chocolate chips
PAM Original No-Stick Cooking Spray

1/2 cup cut-up fresh strawberries
2 teaspoons granulated sugar
Cool Whip topping


Combine strawberries and sugar in small bowl; set aside.

Spray insides of 2 microwave-safe mugs with cooking spray.

Combine dry ingredients in a medium bowl, then mix wet ingredients one at a time. Mix in chocolate chips.

Spray inside of mug with cooking spray and pour batter into mug.

Microwave mug on HIGH for 1 minute 30 seconds to 2 minutes in 1250 watt microwave. Increase to 3 minutes for lower wattage microwave.

Cut the cake into 1-2 inch layers and assemble your strawberry shortcake using a cake, whipped cream, strawberries pattern. Place extra fresh strawberries at the base of your cake.

    My best Mother’s Day memory is that on May 13, 2001 on Mother’s Day is when my hubbie and I started seeing each other. We started talking after a dinner on the grounds at church and have been together ever since. I’m a mother now to two wonderful girls but the day I began my life with their daddy is still my favorite Mother’s Day.

    My favorite mother’s day memory was last year. My husband sent me on some ridiculous trip to the grocery store. I came home and my kiddos had made me a huge chocolate chip cookie in the shape of a heart and covered in strawberries. Then we all snuggled up and watched Beauty and The Beast.

    My favorite Mother’s Day moment is getting taken out to brunch nearly every year to a Mexican restaurant. I’m not sure how this became a tradition, it just did! We’ll break that tradition this year, but only because my oldest son is making his first communion Mother’s Day weekend and the whole family will be in from out of town.

    My best mothers day memory was 9 years ago – our only child was born! What an amazing gift! Every year since then we have spent Mothers Day at Thomas the Train since that is the weekend he is in town. Thomas the Train is what made my son the happiest, which makes my heart sing.

    Also, when my son was just a few hours old, he lifted his head as I held him, and I swear he kissed me! How much better can life get?

    I must say that my favorite Mother’s Day moment was last year. It was the last with my Gram as she passed away in August but we had all of the women of the family together to celebrate her that day since we knew she wouldn’t have much time left.

    Every Mother’s Day is very special to me, so I couldn’t name just one. My mom is gone now, so all of the ones I had with her are held so close to my heart, but also the ones I share with my children and my husband now.
