Well folks, I’ve been eating clean for three weeks now! Check out my clean eating diary blog post for week one and clean eating diary blog post for week two to see how far I’ve come.

At my weigh-in on Monday I found out that I lost another 3 lbs. That puts me down 11 lbs. total in three weeks! In addition to eating clean I have also been doing a bit of walking on the treadmill on Monday through Friday.

Having two little ones who are at each other’s throats most of the time makes working out difficult, but I’m managing to get 1-3 miles in on most days. This probably seems like weak sauce to many of you fitness buffs but for me it’s a big start. Sadly I’ve become quite sedentary over the past few years.

I’m still eating pretty much the same things. Lots of fruit, veggies, lean meat, seeds and nuts. The first two weeks I steered clear of cheese because that’s one of my trigger foods (makes me want to eat MORE MORE MORE) but this week I did have a few pieces of cheese. Still no bread.

Please note that I am sure most people who eat clean do enjoy whole wheat bread and cheese, these are just foods that in the past have made me crave more so for the short term at least I’m limiting them.

Here are some of the things I ate in week three!

Fage Greek yogurt with warm blueberries and strawberries plus some chia seeds.

Spring rolls using what was left of the napa cabbage from my CSA share, quinoa, carrots and onion.

Absolutely AMAZING chicken salad plate. The chicken salad was made with shredded leftover chicken breast, greek yogurt, garlic powder, red onion, red grapes and walnuts.

Kohlrabi and carrot fritters! OH MY WORD these were so good. I had never eaten a kohlrabi before. I just peeled it, grated it with some carrot, squeezed out all the water, beat in one egg then fried in just a dab of coconut oil on both sides. Sauce is Greek yogurt with hot sauce. Yowza this was yummy.

I’m also still three weeks soda free. No Diet Coke for 21 days and counting.

Many of you have asked how I FEEL! Well, after week one of the horrible Diet Coke withdrawal headaches I’ve been feeling great. Mostly satisfied and full and more energetic for sure now. My indigestion issues including bloating and heartburn are totally gone and my skin has improved a LOT.
