Dear Crissy

Parmesan and herb crusted chicken with garden salad

Recently, I shared my baked parmesan fish bites recipe, a yummy and kid-friendly dish featuring Kraft Fresh Take breadcrumbs and cheese. Today, I have another delicious recipe utilizing Kraft Fresh Take; I’m featuring my parmesan and herb crusted chicken with garden salad recipe and I think you’re really going to love it.

This parmesan and herb crusted chicken recipe is quick, easy, and will please your entire family!

Parmesan Herb Crusted Chicken with Garden Salad

We eat a lot of chicken breast in our home, so I’m always looking for great ways to spice-up my go-to chicken dishes. When I received my second inspiration card in the Fresh Take Challenge, I knew that I wanted to do a new spin on a family favorite.

My Fresh Take Challenge prompts:

1. Try a new salad you’ve been dying to make.
2. Create a weeknight friendly meal.
3. Use Fresh Take in both your main meal and side dish.

What’s easier on a weeknight than whipping up a fresh garden salad with all of your family’s favorite veggies, and some yummy baked chicken breast?

I used Rosemary and Roasted Garlic Kraft Fresh take to make this parmesan and herb crusted chicken breast really special—my whole family loved the crispy and flavorful coating—it was a huge hit!

I actually reserved a little of the breadcrumbs and parmesan mixture in a separate dish, and sprinkled it over some sliced Italian bread that I baked to go along with our salad. The cheese and herb mixture was delicious on the bread!

You can find Kraft Fresh Take in the dairy aisle, and it comes in several delicious flavors in addition to the Rosemary and Roasted Garlic.

What I love most about Kraft Fresh Take, is that it allows me to add so much flavor and personality to my meals! Plus, it’s just so fast and convenient, I really love it.

1pkg. (6 oz.) Kraft Fresh Take Rosemary & Roasted Garlic Cheese Breadcrumb Mix

4 small boneless skinless chicken breasts

1pkg. Salad kit OR your own fresh salad veggies

Heat oven to 375ºF.

Spray baking sheet with cooking spray. Open Kraft Fresh Take bag; pull apart center seal. Mix cheese and herbs contents together.

Moisten chicken breast halves with water; place in bag, lightly press cheese mixture onto both sides of chicken. Place on prepared baking sheet; top with remaining cheese and herb mixture.

Bake 30 to 40 min. or until chicken is done (165ºF).

Prepare salad using fresh ingredients of your choice, or use a pre-made bag of salad greens.

Add slices of chicken breast to salad and serve with dressing of your choice.

Optional: Reserve a small amount of the cheese and breadcrumbs mixture (before letting it contact raw chicken) to sprinkle over Italian bread or breadsticks. Toast breadsticks in 350 degree oven for 5 minutes or until cheese is melted and bread is beginning to crisp.
