I’ve been eating chia pudding for a while now, and while I usually just add some chopped almonds and fresh fruit, it’s really fun to play with the flavors. I also love that I can whip up this easy pumpkin spice chia pudding at night and wake up to a breakfast that’s ready to serve to my family.

I usually put a serving in a small jar and send it with my husband to work. He’s always in a hurry, but it’s a great breakfast for him to have when he has a chance to sit down after arriving to work in the morning. He doesn’t always take the time to get a good breakfast, so it makes me feel happy knowing that he’s taking this protein-packed meal with him.

Pumpkin Spice Chia Pudding

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup pumpkin puree
  • 1 1/2 cups fairlife ultra-filtered milk
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice

Directions:

  1. Whisk together ingredients, place in refrigerator in airtight container for at least 2 hours but preferably overnight.
  2. The pudding is ready to eat after refrigerating. Optionally top with chopped pecans, cinnamon or whipped cream.
