I’ve been eating chia pudding for a while now, and while I usually just add some chopped almonds and fresh fruit, it’s really fun to play with the flavors. I also love that I can whip up this easy pumpkin spice chia pudding at night and wake up to a breakfast that’s ready to serve to my family.

Pumpkin Spice Chia Pudding
- 1/4 cup chia seeds
- 1 cup pumpkin puree
- 1 1/2 cups fairlife ultra-filtered milk
- 3 tablespoons maple syrup
- 1 teaspoon vanilla
- 1 teaspoon pumpkin pie spice
- Whisk together ingredients, place in refrigerator in airtight container for at least 2 hours but preferably overnight.
- The pudding is ready to eat after refrigerating. Optionally top with chopped pecans, cinnamon or whipped cream.
