Cheesy Chicken Monterey

About a week ago, while scouring our pantry for dinner ideas, I found an intriguing recipe for cheesy chicken Monterey on the back of a Knorr® Rice Sides packet.
We had all the ingredients, so I made the recipe and my whole family LOVED it!
Fast forward to last week when I received an opportunity to work with Knorr® Sides to share a recipe with all of you. Wouldn't you know it… same recipe! True story, folks.
I had regretted not photographing the dish the first time I made it, because I knew it would be a hit with my readers, so this was a wonderful opportunity for me to have a do-over.
No one in my home protested when I mentioned that we would be having this cheesy chicken monterey again! What I love most about this recipe is that it is flavorful but not too spicy for the kids to enjoy.
The Chicken Flavor Knorr® Rice Side is one of our favorites on its own, and the addition of the other ingredients really transform the rice into something specia.
This cheesy chicken Monterey recipe is seriously delicious. Now that we've made it twice, and each member of my family is thoroughly convinced that this recipe is a winner, it's going into our regular dinner rotation.
This is also a plus for me because it takes almost no time to prepare!

Cheesy chicken Monterey
Ingredients
- 1 package Knorr® Rice Sides™ - Chicken flavor 1 can (11 oz.) corn, drained 1 can (11 oz.) black beans, rinsed and drained 1 can (4 oz.) green chilies, undrained 1 lb. boneless, skinless chicken breasts, thinly sliced 1 cup shredded Monterey Jack cheese
Instructions
1. Prepare Knorr Rice Sides Chicken flavor according to package directions. Stir in corn, beans and chilies.
2. Meanwhile, heat 1 tablespoon vegetable oil in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes.
3. Arrange Rice mixture on serving platter, then top with chicken and cheese.
funny story…when I first saw this recipe I thought it would go over great with the hubby and I both. Put everything on the grocery list that weekend and did my shopping. Couple days later I go to make this for dinner and realized I got the chicken PASTA not the RICE. Oh well, made it anyways. Verdict? I didn’t think it was too bad but thought it would be better with the rice. My husband, however, LOOOVED it. Didn’t understand why it bugged me so bad that I got the pasta instead. I’m making it again this week and I double checked before leaving the store that I got the rice. Thanks for reading :)

I am forever buying those Rice Sides, but not once have I thought about using them as anything other than a side item! Such a great idea because this looks delicious!
