Clean eating update: Down 34 lbs!

I’ve been a real slack about my clean eating diary on the blog. For daily updates, be sure you’re following me on Instagram.

So, last week I reached a pretty big milestone when I hit 30 lbs. lost. That’s really a huge number for me and it’s definitely the most weight I’ve ever lost at one time. I’m really proud of myself for getting to this point and by doing it in a way that is healthy and sustainable.

As I write this post I’ve actually lost a total of 34 lbs.! Since quite a few people have asked me how I’m losing the weight, I made a little video last week.

I’ve had a few rough patches in the past month. The first was our vacation in july when I wasn’t eating the cleanest food. This week has also been tough for me due to some stress and chaos in my life. I’m working through it and determined not to let myself slip too far out of a positive mindset. The fact is, we all have busy/tough times and just pressing through that without giving up is what’s important.

Oh and on a weird note I’ve really been fighting against myself to drink water. I attribute much of my weight loss to hydration so it’s a real bummer that I suddenly just don’t want any water. I am drinking it, but not as much. Working on increasing my water intake every day.

I’ll also admit that I’m starting to get a little bored with my food. I’m on a mission to find new clean recipes this week.

A few things I continue to eat and love are scrambled eggs with avocado and salsa (natural salsa with no added sugar).

Salads! My favorite ingredient to add to my salads are chunks of sweet potatoes. Sometimes I chunk up a potato and roast it with olive oil and sometimes I just bake one in the microwave, let it cool a bit then cut it into chunks for my salad. Either way, tastes surprisingly good on a salad!

Tuna salad! Loving Wild Planet brand wild skipjack tuna. This is a Greek tuna salad. Mix the tuna with a little Greek yogurt, add chopped cucumber, fresh tomatoes and feta cheese on a bed of lettuce.

  1. I know you said you didnthave before and after pictures, its a pity you didnt as it would likely keep you from slipping back. I am surprised and happy you go off the diet sodas. I love the scrambled eggs and avocados. Honestly I dont understand the clean eating thing entirely, I dont drin pop (soda whatever) nor eat many processed foods. I have been really curious about it. My only concern is I would have to eat softer foods due to dental issues.

    What kind of oatmeal do you eat for clean living? And what was portion size of it?
    I am also a DC addict and am so tired of being fat. I started your clean living idea today. Any additional food advice would be great. I don’t want to eat too much in a day and not lose weight each week.

(Are you on Periscope?) Thank you for sharing your experiences with clean eating and weight loss. I wish you unlimited success and happiness. :)

  4. I use hummus and fresh lemon as a salad topping to avoid dressing without feeling deprived. Also, with my eggs, I use low cal fillers like onion and mushroom or spinach to make it look like more food :)

  7. congrats to you!  I’m down 7lbs in 3 weeks just by eating clean. I’ve done no extra exercise besides chasing my kids. I’ve really been enjoying my breakfast smoothie of 1c frozen berries, a handful of spinach, I tbsp chia seeds, 1 tbsp of PB, some cinnamon , a dash of almond extract and water. Also, I’ve been making chicken tenderloins in the crockpot using only, low sodium chicken broth, curry powder and a little raw unfiltered honey. Then I eat it with half a baked sweet potato, green beans and mango. Or I’ll throw a few pieces on top of baby spinach.  I’m also into hard boiled egg whites with mashed avocado inside, sprinkled with a little franks red hot sauce.  One more thing I’m loving is spiralizing zuchinni, throwing it in a pan with a little oil, onion powder, garlic powder and pasta sauce.  Then adding a few Adelle’s teriyaki pineapple chicken meatballs.  I’ve recently seen an interesting recipe that’s just steamed cauliflower put in a blender with cocoa powder and some gelatin. Mix it all up. Put in fridge or freezer and it’s like a mousse. I haven’t tried it yet but I’m planning on it!  Keep up the great work!
