Loving These Simple Family Moments

If you’re like me, you probably have one that one favorite family restaurant that you love to visit over and over, no matter where your travels take you.
For me, that favorite restaurant is Bob Evans. The tradition started when I was a kid (my parents were and still hare big fans), and I’ve just kept right on loving the cozy, warm and friendly atmosphere that I’ve come to expect at Bob Evans.
Of course, I can’t forget to mention that I adore Bob Evans’ simple and comforting food. Even my kids have their favorite menu items. They especially love having fluffy pancakes, bacon and scrambled eggs.
One Bob Evans dish that I look forward to enjoying at least a few times every summer is their incredible chicken salad plate.
Who wouldn’t love white-meat chicken salad topped with honey roasted pecans, served with fresh cut fruit? It’s not only delicious, this dish is also so vibrant and pretty. They say you eat with your eyes first, and I feel like that heart-eyed emoji when I look at my beautiful Bob Evans chicken salad plate!
In fact, I wanted to throw a little impromptu picnic for my kids and my niece this week, so I decided to create my own version of the chicken salad plate at home.
I took all the delightful and fresh flavors of Bob Evans chicken salad plate and rolled them into a whole wheat wrap—perfect for little hands to hold and enjoy.
For the chicken salad I kept it super simple and combined some shredded chicken breast (about 12 ounces) with a few tablespoons of mayonnaise and a pinch of salt and pepper.
I spread this on a whole wheat wrap with lettuce and fresh fruit. You could use any fruit you have on hand, but I tried to recreate the Bob Evans dish by using banana, melon, strawberries, grapes and pineapple.
I didn’t have honey roasted pecans like Bob Evans (boy, are those tasty!), so I just sprinkled a few chopped pecans to give the wraps some crunch.
It’s amazing how much fun kids can have with a blanket spread on the lawn and a cooler full of yummy food and drinks.
I have to admit, I had a great time myself! It’s always good to get out of the house and spend time with the people we love the most.
The kids also really loved the chicken salad wraps. My little boy even said he might want to try having a chicken salad plate like Mommy the next time we visit our local Bob Evans!
Picnics are so fun, and I get that same casual and inviting feeling every time we visit Bob Evans. I love that my children are now old enough to sit across from me at the table and tell me about their day.
We’ve also shared a few hilarious family moments at Bob Evans that resulted in our whole table breaking out into laughter (I’m talking tears in my eyes laughter). We’ve shared so many fun family moments at Bob Evans over the years!.
My life is pretty chaotic, so there are definitely plenty of busy weeknights when seeking out that picnic vibe is essential.

Chicken Salad Wrap
- 1 (12 oz.) can chicken
- 3 tablespoons mayonnaise
- salt and pepper to taste
- whole grain wraps
- fruit of your preference
- chopped pecans
- Combine chicken with mayonnaise, salt and pepper. Add to a whole grain wrap with lettuce, fruit and chopped pecans. Enjoy!
