Ingredients

Dough

  • 2 ¼ teaspoons active dry yeast
  • 1 cup 2% milk warmed to 90°F
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter melted and cooled
  • ½ teaspoon sea salt
  • 3 ½ cups all-purpose flour

Pecan Caramel

  • ⅔ cup brown sugar packed
  • ½ cup unsalted butter
  • ⅔ cup light corn syrup
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 cup pecans chopped, plus more for topping

Cinnamon Paste

  • ¼ cup unsalted butter softened
  • ¼ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  • Fit a stand mixer with the whisk attachment. In the mixer bowl, whisk the warm milk, sugar and yeast. Let it sit 5 minutes, until foamy. Add the melted butter, sea salt and 2 cups of the flour and whisk until smooth.
  • Switch to the dough hook. Add the rest of the flour ½ cup at a time, then knead 5 to 7 minutes, until smooth and soft. Move the dough to a greased bowl, cover and let rise until doubled, about 90 minutes.
  • For the pecan caramel, heat the brown sugar, butter and corn syrup in a small saucepan over medium heat until the butter melts and it comes together. Off the heat, stir in the vanilla and salt. Pour half into a small bowl for the topping and stir the pecans into the other half. Let it cool a few minutes.
  • For the cinnamon paste, stir the softened butter, brown sugar, cinnamon and salt until spreadable. Line a 9x13-inch baking dish with parchment paper and spray it with baking spray.
  • On a lightly floured counter, roll the dough into an 18x26-inch rectangle. Spread the cinnamon paste over it in a thin, even layer, then spoon the pecan caramel evenly on top.
  • With a pizza cutter, cut the dough crosswise into 12 strips, about 2 inches wide. Roll each strip into a spiral and set it in the baking dish. Cover and let rise 30 minutes. Meanwhile, heat the oven to 350°F.
  • Bake 25 to 30 minutes, until golden brown and about 190°F in the center. Cool 10 minutes. Drizzle with the saved caramel (warm it a few seconds if it has thickened) and sprinkle with more chopped pecans.

Notes

Cool the caramel: Let the pecan caramel cool a few minutes before spreading it. Hot caramel can melt through the dough or run off the edges.
Soft dough: The dough should stay soft and a little tacky. Too much flour makes the rolls dense instead of fluffy.
Make ahead: Assemble the rolls, cover tightly and refrigerate overnight. Let them sit at room temperature 30 to 45 minutes before baking.
Storage: Keep covered at room temperature up to 2 days or in the fridge up to 5 days. Warm a roll in the microwave for 20 to 30 seconds.
