Chewy Oatmeal Raisin Cookies

These oatmeal raisin cookies are everything they should be. Sweet, chewy and oh-so-delicious!

Ingredients

  • ¾ cup butter softened
  • ½ cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old fashioned rolled oats
  • 1 cup raisins

Instructions

  • Preheat oven to 375 degrees. Line a cookie sheet with parchment paper or a silicone mat.
  • In a small bowl stir together the flour, baking soda, cinnamon and the salt, set aside.
  • In a large bowl using an electric mixer, cream together the butter, granulated sugar and the brown sugar until smooth. Add the eggs and the vanilla and beat just until combined.
  • Gradually beat the dry ingredients into the wet mixture until combined.
  • Stir in the oats and the raisins.
  • Drop by rounded tablespoonfuls about 2 inches apart the onto prepared cookie sheet. Bake for 8 to 10 minutes or until golden brown. Cool on sheets for 3 to 5 minutes then transfer to wire rack. Cool completely.
