Chewy Oatmeal Raisin Cookies
These oatmeal raisin cookies are everything they should be. Sweet, chewy and oh-so-delicious!
- ¾ cup butter softened
- ½ cup granulated sugar
- 1 cup packed light brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 3 cups old fashioned rolled oats
- 1 cup raisins
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper or a silicone mat.
In a small bowl stir together the flour, baking soda, cinnamon and the salt, set aside.
In a large bowl using an electric mixer, cream together the butter, granulated sugar and the brown sugar until smooth. Add the eggs and the vanilla and beat just until combined.
Gradually beat the dry ingredients into the wet mixture until combined.
Stir in the oats and the raisins.
Drop by rounded tablespoonfuls about 2 inches apart the onto prepared cookie sheet. Bake for 8 to 10 minutes or until golden brown. Cool on sheets for 3 to 5 minutes then transfer to wire rack. Cool completely.
