Ingredients

  • 1 package Hurst’s HamBeens 15 Bean Soup
  • 8 cups chicken broth low sodium
  • 2 ham hocks about 1 to 1½ lbs.
  • 1 large onion chopped
  • 1 clove garlic minced
  • 1 teaspoon chili powder
  • 1 can diced tomatoes 14.5 oz.
  • Juice from 1 small lemon

Instructions

  • Sort through the beans and rinse them thoroughly.
  • Pour the beans into the crock pot. Add the chicken broth, onion, garlic, and chili powder, then stir to combine.
  • Place the ham hocks into the mixture. Cover and cook on high for about 4 hours, or until the beans are tender.
  • Remove the ham hocks from the crock pot and let them cool slightly. Pull the meat from the bones, discarding any fat or bones.
  • Return the meat to the crock pot. Stir in the flavor packet from the bean package, the diced tomatoes, and lemon juice.
  • Continue cooking for an additional 30 to 35 minutes.

Notes

If preferred, using the same method cook on low for 6 to 7 hours.
