Ingredients

  • 2 tablespoons butter
  • ⅔ cup evaporated milk not sweetened condensed milk
  • 1⅔ cups granulated sugar
  • ½ teaspoon salt
  • 2 cups miniature marshmallows
  • 2 cups semi-sweet chocolate chips 12 ounces
  • 1 teaspoon vanilla extract

Instructions

  • Line an 8x8-inch pan with parchment paper or foil. Lightly spray it with nonstick cooking spray.
  • Combine the butter, evaporated milk, sugar and salt in a medium saucepan over medium heat. Bring to a boil, then cook for 4 to 5 minutes, stirring constantly.
  • Remove from the heat. Stir in the marshmallows, chocolate chips and vanilla. Stir fast, just until combined and smooth, a minute or less.
  • Pour into the prepared pan and spread it evenly. Chill for at least 2 hours, or up to overnight. It's best if the fudge is completely firm before cutting. Lift out and cut into 36 squares.

Notes

Use evaporated milk: Sweetened condensed milk won't work in this recipe. Start timing once the mixture boils, and stir the whole time so the sugar doesn't scorch.
