Italian Dense Bean Salad
This easy salad features high-protein ingredients and fresh vegetables.

Salad
- 1 can garbanzo beans drained, rinsed
- 1 can cannellini beans drained, rinsed
- 1 red onion finely diced (about ¼ cup)
- 2 bell peppers diced (red, orange or yellow)
- 1 English cucumber diced, about 2 cups
- ½ cup Kalamata olives pitted and sliced
- 8 ounces fresh pearl mozzarella
- 1 cup turkey pepperoni chopped
- 10 ounces cherry tomatoes halved or quartered
- 3 teaspoons fresh parsley
Dressing
- ⅔ cup Olive Garden Italian Dressing
- 1 teaspoon italian seasoning
- ½ teaspoon oregano
Prepare the ingredients. Chop the red onion, bell peppers, cucumber, tomatoes, olives and pepperoni into bite-sized pieces.
Drain the pearl mozzarella.
Drain and rinse the garbanzo beans and the cannellini beans.
Add all of the prepped ingredients to a large mixing bowl.
Add the dressing to the ingredients in the bowl and toss well to combine.
Serve immediately or divide into airtight containers and refrigerate.
