Italian Dense Bean Salad

This easy salad features high-protein ingredients and fresh vegetables.

Ingredients

Salad

  • 1 can garbanzo beans drained, rinsed
  • 1 can cannellini beans drained, rinsed
  • 1 red onion finely diced (about ¼ cup)
  • 2 bell peppers diced (red, orange or yellow)
  • 1 English cucumber diced, about 2 cups
  • ½ cup Kalamata olives pitted and sliced
  • 8 ounces fresh pearl mozzarella
  • 1 cup turkey pepperoni chopped
  • 10 ounces cherry tomatoes halved or quartered
  • 3 teaspoons fresh parsley

Dressing

  • cup Olive Garden Italian Dressing
  • 1 teaspoon italian seasoning
  • ½ teaspoon oregano

Instructions

  • Prepare the ingredients. Chop the red onion, bell peppers, cucumber, tomatoes, olives and pepperoni into bite-sized pieces.
  • Drain the pearl mozzarella.
  • Drain and rinse the garbanzo beans and the cannellini beans.
  • Add all of the prepped ingredients to a large mixing bowl.
  • Add the dressing to the ingredients in the bowl and toss well to combine.
  • Serve immediately or divide into airtight containers and refrigerate.
