Ingredients

  • ¾ cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 1 can pineapple chunks (20 ounces), drained
  • 1 can pineapple tidbits (20 ounces), drained
  • 2 cups sharp cheddar cheese finely shredded
  • 1 cup Ritz crackers crushed (about 20 crackers)
  • 4 tablespoons butter melted

Instructions

  • Preheat the oven to 350°F.
  • In a large bowl, stir together the sugar and flour. Add the drained pineapple and the cheese, and stir until everything is evenly coated. Spread the mixture evenly in a 1½-quart baking dish.
  • In a medium bowl, stir the crushed crackers and melted butter together until the crumbs are evenly coated.
  • Sprinkle the buttery crackers over the pineapple mixture. Bake for 25 to 30 minutes, until the topping is golden brown.

Notes

Drain well: Let the pineapple drain really well so the casserole doesn't turn watery.
Shred it fine: Finely shredded cheddar melts more evenly into the pineapple.
