Crock Pot Chicken Noodle Soup
This easy Crock Pot chicken noodle soup gives you tender chicken, soft noodles, and a cozy broth with almost no effort. It’s a comforting, family friendly dinner that’s perfect for busy days.

1 ½ pounds boneless skinless chicken breasts 3 carrots diced 2 celery stalks diced 3 garlic cloves minced 1 medium onion diced ½ teaspoon dried thyme 2 bay leaves 8 cups chicken broth low sodium 2 cups medium egg noodles 2 tablespoons lemon juice 2 tablespoons fresh parsley chopped Salt and pepper to taste
Place the chicken in a 6 quart Crock Pot and season both sides with salt and pepper.
Add the carrots, celery, garlic, onion, thyme, and bay leaves. Pour the chicken broth over everything.
Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours.
Remove the chicken and shred it with two forks, then return it to the pot.
Add the uncooked egg noodles, stir, and let them simmer until tender. This usually takes about 6 minutes.
Turn off the heat. Stir in the lemon juice and parsley. Serve right away.
