Rustic Lentil Stew

Ingredients

  • 2 tablespoons olive oil
  • 3 stalks celery sliced
  • 1 large russet potato diced into 1″ pieces
  • 3 medium carrots sliced
  • 1 small onion chopped
  • 12 ounces kielbasa sliced
  • 1 pkg. Hurst’s Brand Garlic & Herb Flavored Lentils
  • 8-10 cups of water
  • fresh parsley for garnish

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven. Add the celery, carrots and onion. Sautรฉ for 8-10 minutes, until soft.
  • Add the kielbasa, Hurst’s Lentils (including the Garlic & Herb seasoning packet included in the bag), potato, and water. Note, for a thick stew, use 8 cups of water, or, up to 10 cups of water if you prefer a thinner soup. Bring to a boil, reduce heat and simmer the stew, stirring it occasionally, for about 35 minutes or until the lentils and potatoes are tender.
  • Garnish with fresh parsley, serve and enjoy this delicious, hearty lentil stew!

    Winner winner Lentil dinner! I make this regularly and have found that I like using low or no sodium chicken broth along with smoked turkey sausage or kielbasa to lighten it up along with the other listed ingredients like onion, celery, potato, and carrots. I also add an extra quart of water to. This makes a lot but it is very hearty, healthy, and delicious! It also comes together quickly. Great recipe!
