This delicious old-fashioned meatloaf is made in a cast iron skillet and tastes like heaven.

Ingredients

  • 2 lbs. Ground Beef 80/20 or 85/15
  • 1 1/2 cups Old Fashioned Oats
  • 1 cup ketchup
  • 2 eggs
  • 1 medium onion finely chopped
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons Worcestershire Sauce

Topping

  • 1/3 cup ketchup
  • 2 tablespoons brown sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large bowl whisk the eggs. Add the onion, salt, pepper, 1 cup ketchup and the Worcestershire sauce to the eggs stir until blended. Add the ground beef and the oats mix well using a wooden spoon or your hands ( I used my hands).
  • Dump mixture into a 10in. cast iron skillet, press to shape. If you don't have a cast iron skillet, you can follow the same instructions for a bread pan.
  • Bake for one hour. Toward the end of baking, mix the ingredients for the topping. Remove from oven, spread on the topping and bake for 25 more minutes or until the center reaches 160 degrees.
  • Let the meatloaf rest about 10 minutes before slicing and serving.

    Was looking for an easy meatloaf recipe and found heaven. My boyfriend both and I loved it. I only used half a cup of ketchup and 1 tbsp of Worcestershire sauce because we ran out of them. Instead of the oats I used panko crumbs, same amount as in the recipe, and the red onions I used I didn’t exactly make very small as I crying from the whole ordeal. I served it without the topping. Hearty and tasty, but most importantly, easy!!! Will use it again, hopefully with enough ketchup this time!

    The meatloaf turned out superbly in my cast iron skillet! However, I forgot to add the ketchup when blending the initial mixture, and I added 1 tbsp of Karo (Blue Label) to the topping, and I substituted 1 sleeve (24 crackers) of Ritz for the Oats. My meat was a special “meatloaf” blend made for a local supermarket, it consists of ground beef, veal and pork sausage, very lean overall. What impressed me most was the bottom of the meatloaf, it was firm and crispy, almost as much as the sides and top. I can’t wait to make a meatloaf sandwich tomorrow, with pepper jack cheese and mayonnaise on Dave’s Righteous Rye Killer bread. Thanks for the recipe — I challenge anyone to match my meatloaf now!!!

This looks awesome and I have and use regularly  several sizes of cast iron skillets.  I use the small one for eggs only, that way it never looses its cure.  I bake in both of the other two, 10” and 12”, and I absolutely love cooking in them.  Only problem for me, the older I get the heavier they get.  I’m afraid eventually I’ll have to find another way to cook.  My favorite dish to make, pork chops simmered in Italian tomatoes and rice,  the pork falls off the bone and is so flavorful.
