Christmas Gooey Butter Cookies

These simple cake mix cookies will melt in your mouth this holiday season!

Ingredients

  • 1/2 cup unsalted butter softened
  • 1 package cream cheese softened (8 oz.)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 white cake mix
  • 1/2 cup sprinkles divided
  • 1/2 cup confectioner’s sugar

Instructions
 

  • Cream the butter and cream cheese until smooth.
  • Add the egg and vanilla, mixing just until combined.
  • Beat in the cake mix until the dough is fully blended.
  • Stir in 1/4 cup of the sprinkles.
  • Refrigerate the dough for at least 1 hour or overnight.
  • Preheat the oven to 350 degrees. Lightly grease a cookie sheet or line it with parchment paper.
  • Scoop rounded tablespoons of dough and roll each into a 1-inch ball.
  • Sprinkle the tops with some of the remaining sprinkles, then roll each ball in confectioner’s sugar until fully coated.
  • Place the dough balls about 2 inches apart on the prepared cookie sheet.
  • Bake for 8 to 10 minutes. Let the cookies rest on the sheet for 2 minutes, then transfer them to a wire rack to cool completely.

  1. Two questions. How many cookies does this yield and can they be frozen?

    1. It’s funny, I just realized the yield wasn’t showing right! Yield is about 36 cookies, and yes, you can freeze these.

    These little cookies are THE BEST cookie I have ever had. I have my home bakery up and running and this cookie has been a fan favorite this holiday season. I suggest heating the cookie for a few seconds in the microwave…it makes them the “gooey” part and they melt in your mouth!!!! I will be making these for different holidays and occasions changing the color of sprinkles!!! MAKE THIS COOKIE…YOU WILL BE GLAD YOU DID😋

    My husband text me the recipe after someone brought a batch to work. I made the cookies twice before Christmas. All of our family, friends & neighbors loved them. Several people asked for the recipe and I shared that as well.

    Made these tonight. I bake for holidays. Tasted wonderful. I did discover that l made a little bigger according to the picture. I would definitely make again, but make sure l roll them smaller. Will put this recipe to the ” Must make Again “
