Sausage Stuffed Mini Sweet Peppers

Ingredients

  • 16 ounce bag mini sweet peppers
  • 1 tablespoon olive oil
  • 1 lb. Hatfield Quality Meats Recipe Essentials Sweet Italian Ground Sausage
  • 8 ounces cream cheese softened
  • 1 teaspoon garlic powder
  • ยฝ teaspoon dry parsley
  • ยผ teaspoon salt
  • ยผ teaspoon pepper
  • ยผ cup shredded 3 cheese blend parmesan, romano & asiago, or, just use parmesan cheese, extra for topping

Instructions
 

  • Preheat your oven to 400 degrees F. ย Wash your sweet peppers and cutย each oneย in half lengthwise, leaving stems intact. Be sure to lay each pepper down to see which way to cut, ensuring they will lay flat on your baking sheet. Remove seeds and membranes. Spread 1 tablespoon of olive oil onto a large baking sheet. Place peppers on the sheet and toss to coat in olive oil. Turn all peppers cut sides up, salt lightly and bake for 6 to 8 minutesย to soften.
  • Crumble and thoroughly cook the Hatfield Sweet Italian Ground Sausage. Drain grease and set aside to cool.ย 
  • In a mediumย bowl mix together the room temperature cream cheese, garlic powder, parsley, salt, pepper and the shredded cheese.ย Stir sausage into the mixture and combine well.
  • Spoon the sausage and cheese mixture into the pepper halves. Sprinkle with extra cheese to your tasteย and bake your sausage stuffed sweet peppers for 5 to 7 more minutes or until cheese is melted. Serve and enjoy while warm!

    I am making BLT Salad for the Big Game. It is oh so delicious: 110 oz. ala dente mini Farfalle pasta, 4 cups mayonnaise, 2.5 cups sour cream, 6 oz. peas, 9 oz. chopped celery, 11.5 oz. real bacon bits, 22 oz. chopped tomato (roma), 12.5 oz. lettuce. Mix until consistent. serve over medium crusted toast, or crackers. If you want a kick, add a jalapeno on top of each sandwich.

  2. I didn’t do anything special for the big game. My focus is always on the game, not the food so it was just chips and dip.

  3. We had meatball, veggie pizza and a few other appetizers.

  7. My spouse was away the week of the “Big Game,” so I was on my own. And as it turned out, I actually forgot the game was on for most of it! I didn’t make myself any special foods, but I did enjoy some nice homemade yogurt that I flavored with honey and spiked with granola for some crunch, so I did have a tasty treat.
