I originally found this recipe via an email sent by Forks Over Knives.
I made just a couple small changes to their recipe to suit our preferences, including replacing the spinach in the recipe with kale.

Crock Pot Vegetable Lentil Soup
Hearty slow cooker vegetable lentil soup is a wonderfully healthy meal option that your whole family will enjoy.
Ingredients
- 1 16oz. bag brown lentils
- 8 cups vegetable stock
- 1 15.5oz. can fire roasted diced tomatoes
- 2 medium white potatoes, diced
- 2 large carrots, sliced
- 1 stalk celery, sliced
- 1 large onion, diced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cups fresh kale, chopped
Instructions
- Add all ingredients to the crock pot except the kale and stir. Cook on low for 6-7 hours.
- Add the kale and cook for another 15 minutes or until desired tenderness.

Well,I just finished it and tasted. I have to be honest,not bad. Not bad at all. Pretty good. I followed the exact ingredient and measurements and in slow cooker I cooked it on High/5 hours . You will get full stars girl. Go vegan !!! :-)

I am just starting to learn how to freeze complete meals. I found some instructions today, anf found a recipe from “dearcrissy.com. I am going to make this recipe and try to freeze the ingredients, raw. Also, will make it, and see which recipe comes out the best. Need to get everything for it first. Thank you for reading this.
