I made just a couple small changes to their recipe to suit our preferences, including replacing the spinach in the recipe with kale.

Of course, if you’d like to add meat, you can certainly do that. Diced ham would be an easy and tasty addition.

I don’t have a ton of experience cooking with lentils, and that’s another reason I was drawn to this soup.
I’m anxious to get creative and find more ways I can incorporate lentils into healthy dinner recipes.

This crock pot vegetable lentil soup recipe is super versatile, as most veggie soups are. You can omit or swap the veggies that you don’t like to create the flavor you’re looking for.

Speaking of flavor, I was really excited and surprised by just how flavorful this vegetable lentil soup was—and without any meat!

Summer’s warm temperatures seem to have extended farther into the fall season than normal, but I don’t care, because I’m ready to put my slow cooker to work even if it never actually gets cold here in Ohio.

Crock Pot Vegetable Lentil Soup
Ingredients
- 1 16 oz. bag brown lentils
- 8 cups vegetable stock
- 1 15.5 oz. can fire roasted diced tomatoes
- 2 medium white potatoes diced
- 2 large carrots sliced
- 1 stalk celery sliced
- 1 large onion diced
- ยฝ teaspoon salt
- ยผ teaspoon pepper
- 2 cups fresh kale chopped
Instructions
- Add all ingredients to the crock pot except the kale and stir. Cook onย low for 6-7 hours.
- Add the kale and cook for another 15 minutes or until desired tenderness.

I absolutely love this recipe but have been wanting to figure out an instant pot way to make it as well as everyone else asking so I just experimented and wanted to let you all know what I did.
I started with the sautรฉ option and sprayed a little avocado oil in the pan and put the celery, carrots, and onion. I sautรฉd them for about 5 minutes.ย
I then added the potatoes and let them sautรฉ for a minute or two.
Turned off the sautรฉ.
After that I added the lentils, diced tomatoes, vegetable stock, salt & pepper.
I put it on pressure cook for 5 minutes and let it do itโs thing.
Final result was that it still tastes delicious!! But lentils were a little hard. I tried it right after it finished so maybe letting it sit a little will soften them or maybe soaking them or slightly pre cooking them prior would be better? Just ideas to try!
Hey Alyssa! I’ve done a few bean recipes in the Instant Pot, and yes, it is hard to get the lentils or beans to be tender. I’ll see if I can come up with an IP version of this and I’ll let you know. :)

I was craving ham and bean soup, but can only have lentils. I cooked this with smoked ham neck bones for flavor (I removed before serving), smoked sea salt, diced ham. I also added some tomato paste for depth. It was fantastic! Thanks so much for the recipe!

Well,I just finished it and tasted. I have to be honest,not bad. Not bad at all. Pretty good. I followed the exact ingredient and measurements and in slow cooker I cooked it on High/5 hours . You will get full stars girl. Go vegan !!! :-)

I am just starting to learn how to freeze complete meals. I found some instructions today, anf found a recipe from “dearcrissy.com.
