I originally found this recipe via an email sent by Forks Over Knives.
I made just a couple small changes to their recipe to suit our preferences, including replacing the spinach in the recipe with kale.

Crock Pot Vegetable Lentil Soup
Hearty slow cooker vegetable lentil soup is a wonderfully healthy meal option that your whole family will enjoy.
Ingredients
- 1 16oz. bag brown lentils
- 8 cups vegetable stock
- 1 15.5oz. can fire roasted diced tomatoes
- 2 medium white potatoes, diced
- 2 large carrots, sliced
- 1 stalk celery, sliced
- 1 large onion, diced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cups fresh kale, chopped
Instructions
- Add all ingredients to the crock pot except the kale and stir. Cook on low for 6-7 hours.
- Add the kale and cook for another 15 minutes or until desired tenderness.

So yummy, I didnt put the potatoes and added garlic in but followed the exact recipe, will make again. My lentils weren’t cooked thoroughly but my crock pot is super old, will cook longer. Thanks will make againv
I absolutely love this recipe but have been wanting to figure out an instant pot way to make it as well as everyone else asking so I just experimented and wanted to let you all know what I did.
I started with the sauté option and sprayed a little avocado oil in the pan and put the celery, carrots, and onion. I sautéd them for about 5 minutes.
I then added the potatoes and let them sauté for a minute or two.
Turned off the sauté.
After that I added the lentils, diced tomatoes, vegetable stock, salt & pepper.
I put it on pressure cook for 5 minutes and let it do it’s thing.
Final result was that it still tastes delicious!! But lentils were a little hard. I tried it right after it finished so maybe letting it sit a little will soften them or maybe soaking them or slightly pre cooking them prior would be better? Just ideas to try!
Hey Alyssa! I’ve done a few bean recipes in the Instant Pot, and yes, it is hard to get the lentils or beans to be tender. I’ll see if I can come up with an IP version of this and I’ll let you know. :)

I was craving ham and bean soup, but can only have lentils. I cooked this with smoked ham neck bones for flavor (I removed before serving), smoked sea salt, diced ham. I also added some tomato paste for depth. It was fantastic! Thanks so much for the recipe!
